These air fried Greek-style turkey meatballs are packed with protein and Mediterranean flavours! Perfect for meal prep and batch cooking.
INGREDIENTS
- MEATBALLS (2-3 SERVINGS):
- 450g Turkey Thigh Mince
- 1 Egg, whisked
- 3 Tablespoons Tesco© Gluten Free Breadcrumbs (or make your own)
- 3 Tablespoons Fresh Parsley, finely chopped
- 60g Feta Cheese
- 2 Garlic Cloves, peeled and finely chopped
- 1 Teaspoon Dried Mint
- 1 Teaspoon Dried Oregano
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Smoked Paprika
- 1⁄2 Teaspoon Sea Salt
- 1⁄2 Teaspoon Black Pepper
SALAD INGREDIENTS (1 SERVING):
- 1⁄4 Head Romaine Lettuce, roughly chopped
- 3 Cherry Tomatoes, halved
- 1⁄4 English Cucumber, thinly sliced
- 1 Tablespoon Fresh Mint, finely chopped
- 1 Tablespoon Hummus – shop bought
- 1 Tablespoon Tzatziki – shop bought
- 2 Tablespoon Kalamata Olives, pitted
- 30g Feta Cheese, crumbled (optional)
- DIRECTIONS
To make the meatballs: In a mixing bowl, add all of the meatball ingredients. Mix well to combine and with wet hands, shape the mix into equal sized balls (should make 10-12 meatballs) – place on to a plate.
Cover the plate with clingfilm and leave to firm up in the fridge for 20 minutes.
Preheat the airfryer to 190°C for 5 minutes. Remove the meatballs from the fridge and place them on the airfryer rack. Air fry the meatballs for 16-18 minutes until golden brown (turning over half way through).
Assemble the simple side salad with all of the salad ingredients as mentioned. Serve with the cooked meatballs.
