Cajun-style Salmon Bowl

Salmon rice bowl with avocado and green beans

: SERVES 2

This recipe features perfectly air fried salmon bites, generously coated in a smoky Cajun-style spice mix. This blend would also work well with chicken, pork or tofu.

INGREDIENTS

SALMON MARINADE INGREDIENTS:

2 x 130g Salmon Fillets, cut into chunks

2 Tablespoons Olive Oil

1 Teaspoon Smoked Paprika

1 Teaspoon Onion Powder

1 Teaspoon Garlic Powder

1⁄4 Teaspoon Cayenne Pepper (optional)

1⁄4 Teaspoon Dried Thyme

1 Teaspoon Oregano

1⁄2 Teaspoon Cumin Powder

1⁄4 Teaspoon White Pepper

1⁄4 Teaspoon Celery Salt (or Sea Salt)

1 Teaspoon Soft Brown Sugar

OTHER INGREDIENTS:

250g Microwave Pouch Wholegrain Basmati Rice

1⁄2 Avocado, sliced
100g Green Beans, blanched Juice of 1⁄2 Lime
2 Teaspoons Coriander, chopped

DIRECTIONS

Preheat your airfryer to 190°C.

In a saucepan pan, fill it halfway with water, season with 1⁄2 tsp of salt and bring to the boil. Cook the trimmed green beans for 2-3 minutes. Drain and set aside

Slice the avocado and chop the coriander.

Slice your salmon fillets into bite sized pieces. I like to keep the skin on but you can remove it if you’d prefer.

In a mixing bowl, add the oil, herbs and spices from the ‘salmon marinade’ list. Mix well and add the salmon pieces. Coat the salmon pieces evenly with the spice paste and leave to marinate for 5-10 minutes.

Place the salmon pieces onto the air fryer tray or an air fryer mat if you have one and carefully place it into the air fryer. Air Fry for 7-8 minutes until the salmon has crisped up.

Whilst the salmon is cooking, microwave the rice according to the packet instruments.

Serve the cooked salmon with the steamed rice, sliced avocado, green beans and garnish with fresh lime juice and coriander.
